A COUPLE in Great Sankey are set to open a new café in Great Sankey later this year after months of renovations.

Chloe Shankland, who is originally from the Lake District, moved to Great Sankey with her partner Jon Strange 10 years ago.

It was while on a walk last year through the village that the couple spotted a shop for sale on Huntley Street.

“We saw it before I ended up giving birth to our son, Edison,” said Chloe.

“I’ve always wanted to open a coffee shop, and I think Jon’s always humoured me and said, ‘one day we’ll move out to the countryside’.

“I looked at it and said, ‘oh my god Jon I think that we can do it here.”

The couple decided to wait until after Edison was born, and a few months found that the property was still for sale.

Chloe, 33, and Jon, 35, decided to buy the shop and make their dreams come true by transforming the ground floor into their own coffee shop, called Number 9.

“It’s something I’ve always wanted to do, I’m really passionate about creating a nice space and serving lots of lovely food and nice coffee,” said Chloe.

“I just love being around people, and especially since I’ve had Edison, I just want to be local and create space that people can come to.

“I feel like I’m hopefully going to have the best of all worlds in a job that I love, talking to people all day and be a part of our local community and bring people together.”

After receiving the keys in February, the pair have been hard at work while juggling full time work and maternity leave to begin renovating the space.

“It has been a bit of a mad year, it’s definitely aged Jon about 20 years,” said Chloe.

“To be fair to Jon, and I think the tables will turn once it’s up and running, but he’s really put a shift in.

“My stepdad is a retired builder but has kindly come out of retirement to assist whenever he can too.”

Number 9 will have breakfast, brunch and cakes available on the menu, focussing on feel-good food.

“It’s not going to be a greasy spoon, it’s not going to be a health kitchen, it’s going to be nice fresh enjoyable food,” said Chloe.

It is currently set to open in October and the couple are looking for front of house and kitchen staff ahead of its grand opening.
