A WESTBROOK man who is heading up a swanky new restaurant in Liverpool is aiming to create ‘lasting food memories’.

Stoke, a brand new robata grill restaurant, will open its doors next month at the new Radisson RED hotel in Liverpool city centre, promising ‘anything but ordinary’.

The venue will offer diners stunning views of the iconic St George’s Hall, looking out onto the Christmas Markets and the city’s bustling culture district.

It is set in the Grade II-Listed North Western Hall next to Liverpool Lime Street station, with the modern, barbecue eatery specialising in organic seasonal dishes and small plates.

Taking the helm is executive chef Paul Whitfield, from Westbrook, who brings more than 30 years of culinary experience to the role.

He has been hard at work crafting a menu of classic dishes with a grilled twist created on a robata grill – a type of charcoal grill used in Japanese cooking.

Working with local suppliers, Paul and his team will offer diners a menu that includes an 800g, 38-day, dry-aged and grass-fed ribeye steak, barbecued Dover sole with Miso curry and pickled apple and pear, as well as whole roasted chicken.

The menu also offers plenty of vegetarian options such as sticky barbecue maitake mushrooms and truffle arancini.

The restaurant will champion local food and drink, including beer from Liverpool-based Love Lane brewery, fresh fish from Fleetwood and Lancashire and Cheshire cheese.

Paul said: “We are incredibly excited to fire up the grill and show Liverpool the fantastic food and drink menu we have been working on.

“A lot of preparation has gone into the menu, using a farm-to-fork strategy which will educate our guests on where their food has come from.

“We hope the amazing quality of the food will encourage people to shop local and find out more about the sorts of ingredients that are right on their doorsteps.

“I have spent most of my career wanting to create lasting memories for people through good food, and I am looking forward to creating more moments in this stunning new restaurant.

“Stoke is anything but ordinary, and we hope our diners will see this from the moment they step inside.”

The restaurant, which is now open for bookings, will simultaneously open with Radisson RED Liverpool and will be open to the public as well as guests.

The hotel’s arrival in the city brings the 10-storey building full circle after it was originally created as the North Western Hotel back in 1871, with a total investment coming in at around £30million.
